Streszczenie: Branża spożywcza jest jednym z obszarów działalności przemysłowej, która wymaga częstego wdrażania technologicznych i produktowych innowacji. Wyroby spożywcze powstające zarówno w zaawansowanych technologicznie fabrykach, jak i w małych przedsiębiorstwach produkcyjnych, są coraz częściej wytwarzane z wykorzystaniem innowacyjnych dodatków do żywności, do których należą m.in. naturalne składniki polisacharydowe. Jednym z takich składników jest produkowana przez bakterie (najczęściej z rodzaju Komagataeibacter xylinus, znanego wcześniej jako Gluconacetobacter xylinus) celuloza, nazywana bionanocelulozą. Bionanoceluloza to polimer o wyjątkowo cennych własnościach użytkowych, wynikających z jego unikalnej molekularnej budowy, którą stanowi chemicznie ultra czysty β-1,4-glukan. Główne cechy tego bionanopolimeru to m.in. wysoka higroskopijność, elastyczność i wytrzymałość mechaniczna. Różne postacie fizyczne i chemiczne bionanocelulozy (wytworzonej zarówno w wyniku hodowli powierzchniowej, jak i wgłębnej) coraz częściej znajdują zastosowanie w wytwórstwie produktów spożywczych. Potrzeba wytwarzania silnie zróżnicowanych (np. użytkowo lub sensorycznie) wyrobów żywnościowych, a także coraz większe trudności związane z dostępem do konwencjonalnych źródeł węgla zewnętrznego, stwarzają konieczność poszukiwania alternatywnych podłoży hodowlanych do wytwarzania bionanocelulozy. Celem pracy jest przybliżenie problematyki wykorzystania alternatywnych źródeł węgla do mikrobiologicznej syntezy bionanocelulozy oraz jej zastosowania w przemyśle spożywczym.

Abstract: The food industry is one area of industrial activities that requires the frequent implementation of technological and product innovations. Foodstuffs obtained both in technologically advanced factories, as well as in small manufacturing enterprises, are increasingly produced using innovative food additives, which include natural polysaccharide ingredients. One of these substances is bionanocellulose – microbially produced cellulose (most commonly by the genus Komagataeibacter xylinus, formerly known as Gluconacetobacter xylinus). Bionanocellulose is a polymer with exceptionally valuable functional properties resulting from its unique molecular structure (formed by the chemically ultra-pure β-1,4-glucan). The main features of bionanocellulose are high hygroscopicity, flexibility and mechanical strength. Various physical and chemical forms of bionanocellulose (produced both during surface and submerged cultivation) are increasingly used in the production of food products. The need to produce highly diversified (e.g., usable or sensory) food products as well as the increasing difficulties associated with access to conventional sources of external coal, necessitate the search of alternative culture media for the production of bionanocellulose. The aim of the work is to describe the use of alternative carbon sources for the microbiological synthesis of bionanocellulose and its application in the food industry.

Abstract: Microbiology plays an important role in nanotechnology, especially that the natural environment (particularly soil) is considered to be the main reservoir of modern molecular nanomaterials, which may influence its inhabitants – microorganisms. Variety of shapes, sizes and properties predestine nanomaterials for tools in the development of many life aspects and associated disciplines, including medicine, agriculture and biotechnology. At the same time, the present knowledge regarding consequences of the interaction between, e.g., environmental microorganisms and nanomaterials (such as silica nanospheres, carbon nanotubes, or graphene oxide flakes modified with titanium dioxide, copper or silver) seems to be insufficient. It is problematic to predict distant outcome and significance of the exposition to such nanostructures. Therefore, it is fundamental to describe the interactions between nanomaterials and living organisms, including bacteria and fungi, which constitute the first barrier between the nanotechnological products and the natural environment. Undertaking the steps for health and environment protection is particularly required when nanomaterials are used for agrotechnical purposes, e.g., exploitation of nanomaterials-containing fertilisers. On the other hand, there are new possibilities of the nanomaterials production with the use of appropriate bacteria. Furthermore, it appears that microorganisms may be stimulated by the nanomaterials to overcome certain problems in the industrial processes.
